Slow-Cooker Beef Brisket

Brisket is a cut that rewards patience. Leave it in the slow cooker all day and it turns meltingly tender by dinner, filling the house with the smell of it. Get it started in the morning before you head out.

Ingredients

Makes 4 servings

  • 800g Beef brisket
  • 200g Brown onion
  • 5 garlic cloves
  • 16g Smoked paprika
  • 400ml Beef stock
  • 40ml Worcestershire sauce

Method

  1. Season brisket generously with smoked paprika, salt and pepper. Sear in a hot pan with oil until browned all over, about 8 minutes.
  2. Slice onion and crush garlic. Place in base of a large pot or slow cooker. Sit brisket on top.
  3. Pour over beef stock and Worcestershire sauce. Cover and cook on low for 7–8 hours until fork-tender.
  4. Remove brisket, rest 10 minutes, then slice against the grain. Skim fat from juices and drizzle over.
