Pulled Pork & Slaw Rolls

These rolls are a decent lunch when you want something more than a sandwich. The pork roasts and shreds in about half an hour, and the slaw is just the coleslaw mix tossed with mayo and a splash of cider vinegar to sharpen it. Pile it on and let the BBQ sauce soak into the bun.

Ingredients

Makes 4 servings

  • 640g Pork shoulder steaks
  • 4 burger buns
  • 240g Coleslaw mix
  • 100ml Mayonnaise
  • 80ml BBQ sauce
  • 12g Smoked paprika
  • 20ml Apple cider vinegar

Method

  1. Rub pork with smoked paprika, salt and pepper. Roast at 200°C for 20 minutes until cooked through, then shred with two forks.
  2. Toss coleslaw mix with mayonnaise and apple cider vinegar, season to taste.
  3. Stir BBQ sauce through pulled pork. Pile pork and slaw into buns and serve.
