Fudgy Dark Chocolate Brownies

These brownies come out dense and fudgy rather than cakey, which is how most people want them. Don't overbake — take them out while the middle still has a slight wobble and let them set as they cool. They're better the next day, if they last.

Ingredients

Makes 9 servings

  • 194g Dark chocolate
  • 155g Butter
  • 212g Caster sugar
  • 4 eggs
  • 97g Plain flour
  • 39g Cocoa powder
  • 9ml Vanilla essence

Method

  1. Preheat oven to 170°C. Melt chocolate and butter together, then cool slightly. Whisk in sugar, eggs and vanilla until combined.
  2. Fold in sifted flour, cocoa and a good pinch of salt until just smooth — do not overmix.
  3. Pour into a greased and lined 20×20cm tin and bake 18–22 minutes until the edges are set but the centre still has a slight wobble.
  4. Cool in the tin before cutting into squares. They firm up as they cool.
