Indian Spiced Egg Bhurji

Egg bhurji is the Indian answer to scrambled eggs, cooked with onion, tomato and spices. Fry the cumin seeds first until they smell fragrant, then build the masala before the eggs go in. It's good piled onto toast or scooped up with roti.

Ingredients

Makes 4 servings

  • 12 eggs
  • 200g Onion
  • 240g Tomato
  • 40ml Vegetable oil
  • 12g Garam masala
  • 8g Cumin seeds
  • 20g Fresh coriander

Method

  1. Heat oil in a pan over medium heat, fry cumin seeds for 30 seconds until fragrant. Add finely chopped onion and cook until golden.
  2. Stir in diced tomato and garam masala, cook 3 minutes until tomato softens and the mixture is fragrant.
  3. Crack in eggs and scramble, folding through the spiced mixture until just cooked through.
  4. Season to taste, scatter fresh coriander and serve with flatbread or toast.
