Butter Chicken

Butter chicken is the curry most people reach for first, and it's easy to make at home once you've got a jar of paste and a tin of tomatoes. The sauce is mild and a little sweet, rich with cream and butter, so it suits kids and anyone who finds other curries too hot. Serve it with rice and naan to mop up the sauce.

Ingredients

Makes 4 servings

  • 700g Chicken thighs
  • 160g Butter chicken paste
  • 400ml Coconut milk
  • 320g Crushed tomatoes
  • 160ml Cream
  • 160g Onion
  • 12g Garam masala

Method

  1. Dice chicken thighs into bite-sized pieces. Fry onion in butter over medium heat for 3 minutes until softened.
  2. Add butter chicken paste and garam masala, stir for 1 minute. Add chicken and cook 5 minutes until sealed.
  3. Pour in crushed tomatoes and coconut milk. Simmer 15 minutes until chicken is cooked through and sauce thickens.
  4. Stir in cream, season with salt to taste, and serve with rice or naan.
