Chicken Fajitas

Fajitas are a good Friday-night dinner when you want everyone building their own. Cook the chicken and capsicum hot and fast so they catch a bit of colour, pile everything into warm tortillas, and put the toppings on the table. Any leftovers are good cold in a wrap the next day.

Ingredients

Makes 4 servings

  • 640g Chicken breast
  • 320g Capsicum
  • 240g Onion
  • 32g Fajita seasoning
  • 6 flour tortillas
  • 1 lime
  • 40ml Olive oil

Method

  1. Slice chicken into strips and toss with fajita seasoning and olive oil.
  2. Heat a large pan over high heat. Cook chicken strips 4–5 minutes until cooked through with some char. Set aside.
  3. In the same pan, fry sliced capsicum and onion for 3–4 minutes until slightly charred. Return chicken and toss together.
  4. Season with lime juice and salt to taste. Serve in warm tortillas with your choice of sour cream, salsa, or guacamole.
