Classic Chocolate Self-Saucing Pudding
Self-saucing pudding is an old winter dessert that makes its own sauce as it bakes. You pour hot water over the top before it goes in the oven, and it sinks down into a pool of chocolate sauce underneath. Serve it hot with ice cream.
Ingredients
Makes 7 servings
- 190g Plain flour
- 46g Cocoa powder
- 190g Sugar
- 76g Butter
- 4 eggs
- 228ml Milk
- 113g Brown sugar
Method
- Preheat oven to 180°C. Melt butter and whisk with egg, milk, sugar, sifted flour and half the cocoa until smooth. Pour into a greased 20cm baking dish.
- Mix brown sugar with remaining cocoa and sprinkle evenly over the batter. Carefully pour 180ml boiling water over a spoon held above the dish.
- Bake 25–30 minutes until the top is set and springs back. The sauce will have formed underneath.
- Season with a pinch of salt and serve warm with cream or ice cream.
