Black Sesame Panna Cotta
Black sesame gives this panna cotta a nutty flavour and a grey colour that surprises people. Toast the sesame seeds first to bring the flavour out, then grind them to a paste so it blends smoothly into the cream. Make it the day before so it sets.
Ingredients
Makes 8 servings
- 13g Gelatine powder
- 74g Sesame seeds
- 558ml Cream
- 248ml Milk
- 155g Caster sugar
- 50ml Honey
Method
- Sprinkle the gelatine powder over 2 tablespoons of cold water per serve and leave to bloom for 5 minutes.
- Toast the black sesame seeds in a dry pan for 2 minutes, then grind to a fine paste with a little of the cream.
- Warm the cream, milk and caster sugar in a saucepan until steaming but not boiling.
- Stir in the black sesame paste until evenly coloured, then whisk in the bloomed gelatine until fully dissolved.
- Strain into small cups or glasses.
- Chill for at least 4 hours until set.
- Drizzle each with a little honey before serving.
