Black Sesame Panna Cotta

Black sesame gives this panna cotta a nutty flavour and a grey colour that surprises people. Toast the sesame seeds first to bring the flavour out, then grind them to a paste so it blends smoothly into the cream. Make it the day before so it sets.

Ingredients

Makes 8 servings

  • 13g Gelatine powder
  • 74g Sesame seeds
  • 558ml Cream
  • 248ml Milk
  • 155g Caster sugar
  • 50ml Honey

Method

  1. Sprinkle the gelatine powder over 2 tablespoons of cold water per serve and leave to bloom for 5 minutes.
  2. Toast the black sesame seeds in a dry pan for 2 minutes, then grind to a fine paste with a little of the cream.
  3. Warm the cream, milk and caster sugar in a saucepan until steaming but not boiling.
  4. Stir in the black sesame paste until evenly coloured, then whisk in the bloomed gelatine until fully dissolved.
  5. Strain into small cups or glasses.
  6. Chill for at least 4 hours until set.
  7. Drizzle each with a little honey before serving.
