Miso-Glazed Salmon

Miso glaze turns a plain salmon fillet into something that tastes like more effort than it took. The paste caramelises under the grill and goes savoury with a touch of sweetness. Serve it with rice and steamed greens.

Ingredients

Makes 4 servings

  • 680g Salmon fillets
  • 80g White miso paste
  • 40ml Mirin
  • 32ml Soy sauce
  • 40g Honey
  • 20g Fresh ginger
  • 40g Spring onions

Method

  1. Mix miso paste, mirin, soy sauce, honey, and grated ginger into a glaze.
  2. Coat salmon fillets with glaze and leave to marinate for 10 minutes if time allows.
  3. Grill or bake at 220°C for 10–12 minutes until caramelised and just cooked through.
  4. Scatter sliced spring onions and serve with steamed rice and edamame or broccoli.
