Coconut Lime Fridge Slice

This slice is a no-bake dessert for when it's too warm to turn the oven on. Press the crushed biscuit base into a tin, pour the coconut and lime mixture over it, and let the fridge do the work. Leave it a good few hours so it sets firm enough to slice.

Ingredients

Makes 8 servings

  • 387ml Coconut milk
  • 116g Desiccated coconut
  • 194g Plain biscuits
  • 78g Coconut oil
  • 1½ limes
  • 58g Icing sugar

Method

  1. Crush biscuits and mix with melted coconut oil and half the desiccated coconut. Press into a lined tin and refrigerate.
  2. Warm coconut milk and icing sugar in a saucepan until sugar dissolves. Remove from heat, stir in lime zest and juice, and remaining coconut. Pour over biscuit base.
  3. Refrigerate for at least 2 hours until set firm. Taste the topping layer before it sets and add more lime juice if needed. Slice and serve cold.
